I tried this recipe from one of the numerous blogs that I read. I have no idea which one, but if I remember, I will share it with you. I had the ingredients on hand. Nina likes mushrooms now.
I cut the butter in half and used some olive oil. I used a couple of shallots but I didn't have enough so I added some minced onion. I used all the fresh mushrooms that I had- so more than a cup. I love mushrooms.
CHICKEN GEORGIA
4 tablespoons butter
4 skinless boneless chicken breast halves
1 cup sliced fresh mushrooms
2 tablespoons minced shallots
1/4 teaspoon salt
1/4 teaspoon pepper
4 ounces grated mozzarella cheese
Melt butter over medium heat. Add mushrooms and shallots and sprinkle with salt and pepper. Cook 10 minutes. Add chicken and cook 10 minutes on each side, or until tender. Transfer chicken to platter and sprinkle with grated cheese. Top with mushroom mixture. Cook and let stand 5 minutes or until cheese melts.

GLEE- you have to see it!
GLEE
From Ryan Murphy, the creator of "Nip/Tuck" and "Popular," comes GLEE, a one-hour musical comedy that follows an optimistic high school teacher as he tries to transform the Glee Club and inspire a group of ragtag performers to make it to the biggest competition of all: Nationals. Will Schuester (Matthew Morrison, Broadway's "Hairspray"), a young optimistic teacher, has offered to take on the Herculean task of restoring McKinley's Glee Club to its former glory. Driven by his secret past, Will is determined to do whatever it takes to make Glee great again, even though everyone around him thinks he's nuts. He's out to prove them all wrong.
It is on FOX on Wednesdays at 9:00 p.m. You have to see it. Yes, it is humorous but more importantly, the talent is amazing. I LOVE the music. No, really, I do. I will probably download the songs to play in the car with the girls.
If you haven't seen it, I urge you to watch the episodes online through Hulu or Fox. Otherwise, don't miss the upcoming episodes.
Disclaimer: Remember- I adored Donnie and Marie. I was Annie in ninth grade. I LOVED Fame. I secretly would love to be that teacher that sings with her students!
